Very good for two people when there is only one cob of corn left. Also good for people whose teeth may not be up to corn on the cob. This recipe is very user friendly, just adjust proportions or delete ingredients to your hearts content, though I wouldn't recommend any of the super sweet corns for this recipe, it needs a good strong corn flavor to blend well with the bell peppers and lime.

Ingredients:
1 ear fresh yellow or bicolor corn 1 red bell pepper, roasted (from a jar okay) 1 TBSP butter (to taste) fresh lime juice (1-2 TBSP) fresh cilantro (to taste) salt & pepper (to taste)
Directions
Step 1:
leave the leaves around the corn and cook in microwave for 2 - 3 minutes til done
Step 2:
dice bell pepper and chop cilantro
Step 3:
melt butter, add lime, salt and pepper and stir well
Step 4:
shuck corn and with a sharp knife cut the base of the corn so that the corn ear is flat at the base. Remove the kernels from the cob by standing the cob on its base (in a bowl to catch the kernels) and cutting down the sides of the cob at the base of the kernels.
Step 5:
Combine corn, peppers and cilantro. Dress with melted butter.
